Here's a great way to create a lobster dip recipe that will amaze your party guests.

Lobster? Really? Wow - how elegant!

It's easy and affordable if you stretch a few leftovers from a big lobster feed or you're willing to buy a small container of lobster meat from the local seafood retailer.

Maine lobster is best, but any lobster will taste just fine. All you need is enough for a little taste on each cracker.

We were introduced to this lovely dip last summer when my sister Lee decided to whip something together using leftover Maine lobster meat.

Lee's Great Scott! Lobster Dip Recipe

INGREDIENTS

1 or more cups of lobster meat (make sure there are no shell pieces!)

1-2 tablespoons of mayonnaise

1/4 tsp. of fresh basil, finely crushed

A dash of salt and pepper to season just a bit

A "squidge" of lime juice (just one squeeze, 1/4 tsp)

RECIPE

  1. Mix together the lobster meat, basil, salt, pepper and lime juice.
  2. Spoon in just enough mayonnaise to moisten the mixture, adding 1 tablespoon at a time. (Be careful not to make it "soupy")
  3. Chill for awhile (20-30 minutes) optional
  4. Serve it with thin crackers that have a very light taste. You'll want the lobster flavor to be the star.

Makes 1+ cups of dip.

Be sure to keep this dip refrigerated until just before serving. It should be served very cold.
