This hot artichoke dip is a cheesy, easy appetizer recipe.

Second, your guests will love this hot dip recipe even more than you expected. The perfect blend of flavors, including lemon, artichokes, breadcrumbs and cheese, makes this dip creamy and tangy.

You can't go wrong when you serve this dip just a few moments out of the oven, hot but not scalding! It's delicious when spooned out on toasted french bread slices, or your crowd can dive right in with corn chip "scoops."

Hot Artichoke Dip Recipe

INGREDIENTS

One 13-3/4 oz. can of artichoke hearts, drained thoroughly and finely chopped

1 cup mayonnaise (fat-free is fine for a healthy recipe)

1 cup grated Parmesan cheese

1/2 cup finely chopped onions

3 Tb. dry unseasoned breadcrumbs

1 Tb freshly squeezed lemon juice

1 tsp olive oil

1/4 tsp ground black pepper

RECIPE

  1. Preheat the oven to 400 degrees.
  2. Blend together in a medium-sized bowl: mayonnaise, cheese and onions.
  3. Mix in the chopped artichokes.
  4. Add the lemon juice and pepper. Stir until thoroughly mixed.
  5. Pour into a square glass baking dish or ovenproof casserole dish.
  6. Combine bread crumbs and olive oil, and sprinkle this mixture over the dip.
  7. Bake until the top turns golden brown (about 20 minutes).
  8. Let it cool slightly and then serve it with thinly sliced french bread toasts or corn chip "scoops."

Makes 2+ cups of dip.

If you're worried about being too busy right before your party to prepare this hot artichoke dip, you can blend all the dip ingredients, refrigerate them in your baking dish, and then add the breadcrumb topping just before baking. Enjoy!
